Blackberry chicken recipe

I just wrote this out to email to someone, so I thought somebody on my flist might like to make this too! It's SO YUMMY.
The original recipe said that this serves 4, but personally I prefer it for about 2 people since that way you get plenty of sauce each for your vegetables, so I've halved the chicken but kept the rest the same.
Ingredients:
2 skinless, boneless chicken breasts
2 tbps fresh blackberries (you can buy these if you don't have anywhere to pick them)
1/4 cup chicken broth (quarter of an oxo cube is what I use)
2 tbsps brown sugar
2 tbsps white wine vinegar / 1 tbsp regular white vinegar
1 tbsp balsamic vinegar (yum!)
1 tsp olive oil
2 garlic cloves, minced
3/4 tsp paprika
1/4 tsp cumin
4 1/2 tsps thyme
1/2 tsp salt
1/4 tsp pepper
1. In a small bowl, mash 2 tbsps berries. Add the broth, sugar, vinegar, oil, garlic, paprika and cumin.
2. Place the chicken into a baking dish and pour mixture over (you may wish to slice the chicken to let the sauce get in.) Sprinkle the thyme, salt and pepper over.
3. Bake uncovered for 20-25 minutes or until cooked.
4. Serve with roasted vegetables (I like to do potato, sweet potato, squash, carrot and courgette. The colours look so lovely with the purple sauce.)
